A known method of preparing a chewing gum by melting crystalline sorbitol, mixing it with a gum base and an inhibitor, crystallizing and molding a homogeneous mixture. Instead of crystalline sorbitol, an aqueous solution of it can be used, concentrated by combining and containing glycerin and / or mannitol ii as a crystallization inhibitor 1J. However, in carrying out this method, all components should be carefully matched, and the optimal amounts of individual components (depending on the used raw materials should be determined experimentally. The goal is achieved by the fact that during the implementation of the method of preparing chewing gum, which involves mixing the base with the fine syrup, introducing into the resulting 31 mass of the remaining components according to peuestion and shaping the resulting mass, sodium gluconate in the amount is added to the sorbitol syrup 2 to 12% of the total mass of chewing gum and daring are evaporated to 9O - 95% solids content. In the described method, the coi-bitol syrup containing sugar acid or its water-soluble salt is used to control crystallization. The introduction of small amounts of crystalline sorbitol into one stripped syrup improves the texture of the composition. The advantages of this method are that the resulting mass is easier to form, the method is not sensitive to changes in the composition of the raw material, the finished product is more stable during storage, and may not solidify for a long time.
